You gonna need: 
200g plant-based chocolate
1/2 cup canned coconut milk (fat rich)
2 tablespoons sugar

Heat the coconut milk until it boils. In a bow, pour it over the chopped chocolate. Leave it aside for 2-3min and stir until the chocolate is completely melted/smooth. Sweeten the ganache and leave to cool before using as a topping or filling for cakes - or eating plain (on days of existential crisis 🫠).

As I promised, here’s the recipe for the orange As I promised, here’s the recipe for the orange wonder. Before you start, preheat the oven to 180 degrees celsius. Mix together the dry ingredients and then the wet ones. The baking time depends on the size of your pan :)

Ingredients

• 2 + 1/2 cups wheat flour
• 2 tbsp yeast
• 3 tbsp cornstarch
• 1 pinch salt
• orange zest
• tsp turmeric
• 2 cups sugar
• 240 ml (~2 cups) orange juice
• 1/2 cup vegetable oil

The sauce is made from sugar and orange juice. Mix them both together and simmer over medium heat until it gets to the consistency you like.

Tips 🍊
• For the orange juice, I mix in a little lime to give it more acidity. 
• The more orange zest you use, the more aromatic your cake will be. 
• After greasing the pan, line the bottom with a little sugar and add thin slices of orange. This preserves the orange bittersweet taste + gives the cake a beautiful finish.
• Leave to cool completely before serving (especially if you followed the previous step). Enjoy!

In the original version, the blend of sugar, coffee and water gets emulsified when mixed. In this version, to reduce the amount of sugar involved 🫠 I used a teaspoon of xanthan gum, a natural emulsifier (I had it in my drawer, as it's also great for nice cream). But without the sugar, it seems that something is missing... I always get my black coffee or latte without sugar, but in this case, I don't know, maybe I still have to get used to the idea.

Some days ago, I got the pleasure of trying out th Some days ago, I got the pleasure of trying out this #pumpkingbread recipe for the first time. I was surprised how such a blend of winter flavors ( the warmth of cinnamon +  the subtle kick of white pepper) could make chilly days into cozy moments. Hope you enjoy it!

Ingredients: 

60ml warm plant-based milk
300-350g all-purpose flour
7g active-dry yeast
1tbsp curcuma
1tsp cinnamon
1tsp white pepper
190g pure pumpkin puree
50g sugar
1tbsp salt

Combine the ingredients (first, the yeast + water, letting them sit for ~ 10min, then add the other ingredients) and knead the dough until smooth and elastic. Let it rise in a greased bowl until doubled in size, then punch it down, knead it again, and allow it to rise once more. Preheat your oven to around 200-220°C and bake it until it's golden brown. The secret is to knead the dough multiple times to develop its texture and flavor.

Pumpkin season is here and I’m testing some pump Pumpkin season is here and I’m testing some pumpkin recipes. That’s the first #pumpkinbread I’ve ever made and I’m curious how it will turn out 🌝

• Pumpkin lasagna (we have it today for lunch)
• Pumpkin + apple crumbled cake 
• Pumpkin latte (never tried 😮)
